Even during brisk wintery days a delicious lemon confection can warm up your taste buds. You’ll be surprised that our tasty little tart has so many complex flavors in just one easy to make recipe. Who knew that out of simplicity a sophisticated dessert can come to fruition? We promise that this mouthwatering dessert will satisfy even the most discerning palates!

Zesty Lemon Tart

Serves 6

2/3 unsalted butter, at room temp

3/4 cup of granulated sugar

Zest of three organic lemons (and juice)

2 eggs

3/4 cup of all-purpose flour

1/2 teaspoon of baking powder

2/3 cup of confectioners’ sugar

2 scoops of Wellness Please Multi-Collagen

A 9-inch round springform pan

Preheat your oven to 400 degrees Fahrenheit (depending on your ovens size and power the cooking time may vary by minutes)

Zest the three lemons and put aside for later, now juice the lemons and set the juice aside too. In a mixing bowl mix the room temperature butter and sugar until you reach a cream-like consistency. Pour in 1/3 of the lemon juice and incorporate it into your mixture. Add eggs one at a time and continue to beat the mixture as you add the all-purpose flour (make sure to sift before adding). Add baking powder and the Multi-Collagen continue to mix until the batter becomes thick and smooth. incorporate 2/3 of the lemon zest with a spatula folding it in gently until evenly distributed. Then butter your 9-inch pan and dust with a light coat of all-purpose flour.

Add your mix to the now coated pan and distribute evenly (do not pat down hard, this will make the batter lose its airiness). Place the pan in the oven and bake for 22 to 25 minutes depending on your oven. While the tart is baking take the remaining lemon juice, confectioners’ sugar, and zest and mix it together to make a glaze. Check the doneness by using a skewer at the center of the cake, if it comes out dry; it’s done, if not leave in for a few more minutes. Once your tart is made, take out of the oven to let rest, at this time pour the glaze evenly over the cake and let it sit for 10 minutes. After that time release the cake from the springform and transfer to a plate lightly dust with powdered sugar and serve.

You can add roasted lemon slices for garnish by roasting lemon slices in a 375 degree oven for 5-10 minutes or until they reach a nice light brown color.
